You've GOTTA See My Lunch!

I stumbled across the idea of a salad in a jar a few months ago....You've probably already heard of these, but please remember, I live under a rock, so I just may be a bit behind the times.

I pinned a few recipes on a Pinterest board, but I really just wanted the underlying concept. I wanted to create my own with all the things I like. I didn't want to be tied to someone else's recipe.

Today, this is what I had:


While at the store today, I pondered all the yummy things that could go in a salad, and I bought them....ALL.

Just in case I climbed out from under my rock before you heard about this, here's basically how it's set up (You can use any size Mason jar that you might have lying around. I used a regular mouth large jar):

  1. salad dressing of your choice
  2. harder veggies--those you have to chop up to get into the jar
  3. beans, grains, or pasta (I didn't add any of these things this time)
  4. cheeses and proteins
  5. softer vegetables/fruits
  6. nuts or seeds
  7. greens

When I first heard of this, I thought, oh, you just shake it up and the dressing coats everything, and I assume that if you pack it lightly or use a runnier dressing than I did, you might be able to do this, but let me tell you, I crammed that puppy about as full as was humanly possible. Those ingredients weren't going anywhere. Totally portable without worries of the wet stuff making the other stuff gooshy and gross.

So...when all is said and done, you pour the salad into a bowl. I was blown away by how big that salad was. I'd say if you're going to use a big Mason jar, you'd probably better have a pretty large bowl as well.

Also, I learned that if you want to, you can prepackage these for about five days, but if you're going to do this, it's best to add the cheeses/proteins and the softer fruits/vegetables on the day you plan on eating the salad.


I liked that I had options....My house felt like a salad bar you'd find at a restaurant; only, it was personalized with all the things I like. Here are some ideas of what each layer might contain:


Layer #1: salad dressing
Let's be real here....The sky's the limit. I opted for Thousand Island because clearly it's the salad dressing of the gods, but you could do whatever lesser dressing you might be tempted to consume. ;)


Layer #2: Hard, chopped up vegetables
I used cucumber, green and red bell peppers, and broccoli, but was kicking myself later that I hadn't added celery. Snap peas would be good too. Carrots are another obvious option, but they make my mouth itch, so I left them out.


Layer #3: Beans, grains, or pasta
Like I mentioned above, I didn't add any of these kinds of things, but I had garbanzo and black beans on hand just in case, and I think those would've been great. You can add grains like cooked rice or barley, but that was more work than I wanted to put in at the time--saving these for the future. Pasta-wise, corkscrews, bowties, macaroni, etc., etc. might be a fun layer in the jar and might add a little something texture-wise to the salad.


Layer #4: Cheeses and proteins
This is my very FAVORITE layer. I LOVE salads with cheese and hard boiled eggs. I also love chicken. I had cooked up some chicken in some enchilada sauce in my crockpot the other day and have been using it in a lot of things lately. It was a great addition to this salad. Ham, canned chicken or tuna or chopped lunch meat might be good in a salad. Do I even need to mention bacon? Man, oh, man! Bacon would take it over the top....YUM!

I used Tillamook medium cheddar just because that's our go-to cheese in this house, but you could crumble some feta or cube any ol' kind of cheese to give it a fun flavor and texture.


Layer #5: Softer vegetables and fruits
I added the less-sugar-added Craisins to my salad today. Wow! I love a little sweet zing. I was thinking Mandarin oranges, pineapple, olives, peas, tomatoes, avocados, dried apricots or even papaya, or berries might bring some yummy flavors to the experience.


Layer #6: Nuts and seeds
Here, I threw in some sunflower seeds, but you could really go with anything with a little crunch--almonds, walnuts, etc. I also strayed from the path a wee bit and threw on some dry chow mein noodles--SO GOOD! These, of course, you'd want to throw on when you ate the salad so they didn't get soft...EEK! Croutons would probably be this way too....You might just want to hold off on those until you've got the salad poured out.


Layer #7: The greens
It's funny to throw the greens in last. Somehow it seems fitting to me. The thing I'm least excited about in a salad is the greens, so with the way this all plays out, at least for me, you throw in all the things you enjoy eating, so you get all excited about what you're about to partake of, and then you add the part that makes it a salad--the obligatory greens. Somehow it's like eh, alright, if I have to, but by then you don't really care anymore--just let me at the chicken, cheese, and Craisins.

I put in green leaf lettuce. I pulled off a few leaves, rinsed them, and tore them up with my hands and stuffed them into the top of the jar. You could use spinach, red leaf or Romaine lettuce, iceburg, etc. Really any green you'd throw in any other salad is great here.


So, there you have it. Put your lid on, and it's good to go for that day. Pour it out into that bowl you've had sitting aside, and you're good to go. When I got the greens poured out, I put the lid back on and tossed the rest of the ingredients so that the dressing would coat it all. I did have to use my fork to get some of the toppings out. Croutons and softer, bread-like toppings might be best tossed on at this point.

They say you can store it for up to five days with the lid on (without those ingredients that I mentioned above--add those in on the top on the morning you plan on eating that jarful, and you're set).

Cram One More Thing In

I thought I might add one other thing into this new writing tradition....dinner.

Tonight, we had teriyaki chicken:

1 C. water
1 C. sugar
1 C. soy sauce
some garlic
chicken pieces

Throw them in the crockpot on low for 6 hours or high for 3 hours and serve over rice.

Someday, I'm going to learn, but I'm fearing that it may be too late. I guess what I'm saying is that I might now be considered an "old dog." New tricks are just not my thing. I continually try to do "one more thing" throughout my day, and with this comes a chaos. I'm always in a rush. I think I'm finally deciding that that's just who I am. That's how I roll.

My brother was in town last week. As we talked, it became apparent that I may be sharing too much here, in his opinion. Well, he's going to love my first bad....Talk about TMI. I figure there might just be a mom or two out there who might just commiserate with me and my life. They might nod and smile along with what I write as they read. I hope this is the case, anyway.

We were raised in a very hush, hush household. There were too many taboo topics to number. Someday, maybe I'll make a little list for you.

So, consider yourself warned....TMI ahead.



Bads

  • Not on the floor?!
I went to a public place today--a museum, actually. I needed to speak with the curator and spent quite a bit of time talking to her. I had a little entourage of four with me. I had told the kids before we walked in that they were not to touch anything and this was an adult place, so in order to go in, they needed to act like little grown ups. They did a good job.

After a few minutes of me speaking to the curator, #7 came up to me and told me that she needed to go to the bathroom. Being relatively new to using public facilities, #7 does what each of my children did at this stage in life--ask to go to the bathroom anywhere and everywhere. I guess you could say she's becoming a connoisseur of public restrooms. She could probably tell you where the best place to go in the entire Beaverton area, if you know what I mean.

Anyway, this museum was no different. The little girls room was calling her.

I had the kids dressed in swimming suits as there is a park with a fountain close by. I thought that if they could do a good job on this errand, they could be rewarded with some fun time in the water.

The kids kept wanting to go into a back room. They knew they shouldn't, so they stood at the entrance and looked in. The restroom was in the back of this area, but clearly written on the door were the words "Not a public restroom."

#7 kept coming up and pleading with me. I finally said, "Well, then, we'll just get in the car and go home. Her response was immediately, "Oh, never mind. I don't need to go bathroom."

Within moments there was a new water feature in the museum. Ugh! EMBARRASSING!

I went and got some carpet cleaner and took it to the museum.

I went to pick #5 up at the church today from Cub Scout day camp. There was a blood drive going on. 

As I pulled into the parking lot and saw the signs, I remembered that I had missed the last one, so I thought it might be a good thing to do this time. I pondered my schedule for the rest of the afternoon and evening and found that the only time I had available was during that next hour. I could do this. I was sure I could.

I need to add that while I waited, my cell phone died. 

#5 got into the car and the plan was created. At this point, I had six children in my care--three ten-year-old boys and three younger children.

There is an elementary school across the street from the church. I decided that I'd take the kids to the playground and let them play. I would run across the street on foot and do my thing. They would then have the car at their disposal if they needed it. I left it unlocked but took the keys with me.

I borrowed every phone I could, knowing that the Warden would be heading home and would pass the school, to reach him to have him stop by the school and watch over the kids for a few minutes. I heard nothing from him.

Never have I wanted to bleed faster. I knew once I was hooked up, there would be no escape. The pressure was on. Thankfully, I got in there, got it done, and everything was fine, but my stress level was HUGE.

There's more to this story than I'm sharing, but that would make but another bad thing, and I've limited myself to two, so there. Let's just say that I was supposed to be home by 5pm in order for a mom to come pick up her boys, but I didn't get home until 5:13. I had missed her, and I was sure she had stressed about where I was and where her boys were.

When I finally spoke with her, she had been late, so she thought it was her fault because I had to have #5 to soccer practice by 5:30. Ah well. It all worked out, but it doesn't change that fact that maybe everything would have been solved if I hadn't decided to give blood.

I have been a mom to two for these past three days. #1 is obviously not around. #s 2 and 3 have been a EFY (an LDS youth conference kind of thing). #4 has been at scout camp (surviving, literally). #5 has been spending his days at Cub Scout day camp. That leaves #s 6 and 7 in my care. To be honest, it's been pretty sweet! It's been fun to focus on just the two of them. We went to the movies, just us three, yesterday and bought a big ol' $8 popcorn and had it refilled just before we went home. Sa-WEET!

Anyway, today ended that. I have the little girl I keep every Thursday and her older brother. It's been great because they play so well with #s 6 and 7.

We went from park to park to park today. Including the fountain and elementary school playground I mentioned above. All in all, I think we must have gone to five different parks today.

  • Spiritual highs.
I LOVE picking my kids up from EFY. I think I told you this a couple days ago. The first day was wonderful, Tuesday and Wednesdays were okay, but tonight was a total spiritual high. 

The kids dress up one day during EFY. The kids looked so sharp when they left this morning.

#2 went home with some friends to play games afterward, so it was just me and #3 for the ride home. She went through all of her notes and shared everything she'd learned and what it meant to her. I feel honored to be entrusted with such experiences and feelings.

I make a KILLER peanut butter chocolate milkshake. I made them for the third time this week tonight. I really have done well to cut back on my white sugar intake, but this one just can't be avoided...yet. I have cut out the white flour--the stomach pains just aren't worth it.



Tomorrow, #1 gets her travel plans. She'll depart from the MTC within the next two weeks and will be on her way to the very rainy Philippines. We'll read about all of this in her email on Saturday.

Also tomorrow, I'm off to Cub Scout day camp to hang out with my good buddy Tonya.

Once all of this week's activities are over, next week will be surprisingly mellow, but you know I probably won't allow it to be that way. It's the old dog in me.

Four More Days

Four days!....and I'm feeling a bit frantic. What to do? What to do?

After a wee bit of stomach pain, the typhoid pills are taken, her things are all together, and she's busily packing her room away for a year and a half.

Why does that suddenly seem like SUCH a LONG time?

She wanted to go to the beach for one last time, so today, that's what we'll do. She's in search of a floppy cotton hat (on her packing list). There's a GREAT hat shop at the beach, but the kids usually try on the wackiest thing they can find. So much so that part of me wonders if there's a legit hat anywhere in the place. Regardless, that's where she wants to look.

She also still needs to get her driving record. That will happen Monday.

We'll take our traditional stop at the cheese factory on our way home today and pick up an ice cream cone. So happy for these little family customs that somehow bring stability and comfort during times like these.

I rode in the car with her yesterday, and I suddenly realized how I'm taking all of this for granted. It just hasn't clicked yet. We had people in our home the other night to say good-bye to her, and I just felt like Wow! How nice to have friends over.

When will this seem real?

Now that I look back, this is how I felt around the time she was born....Clueless! I went in to be induced that morning and was cracking jokes and having a good ol' time. Yup, clueless! That is EXACTLY what this feels like. Subsequent deliveries were met with a bit more realism and even a tiny bit (Haha! Yah, right....Tiny bit?) of trepidation.

She came home from saying good-bye to friends last night. She went straight downstairs to her room--very unlike her. I called out to her, and I could hear the tears in her voice. I haven't seen her cry since she was a baby. This child is a rock. I went down to talk to her. #3, lying in her bed across the room, eyes very wide with what look like shock, said, "She's crying." #1, busying herself with clearing her bed from all of the stuff she has yet to pack, chimed in, "And it's not pretty."

She assured me that she knew everything was going to be okay. She has such conviction for what she's doing. "It's just going to be such a long time." One of her friends is heading to Hawaii tomorrow and is currently waiting for his mission call. She knows that it will be two and a half years before she sees him again. Tough!

So, the next three days, we will fill with packing, taking care of those last preparations, and having fun. She leaves on Tuesday.

We discussed her last dinner with us while we were driving around yesterday. She wants my mom's dip*. That is all. I tried to pin her down on a real meal. Nope. She wants my mom's dip. So, that will be what we shall have. I may add a meal around it, but if that's what the girl wants, that's what she shall have.

That's what you do when you only have a day left, I guess.

I've taken a bit of a vacation on the crockpot menus. Time to get back into the swing of things. I've been using my crockpot nightly, but I just haven't had a formal menu made up. Here's one for this week. I've temporarily retired from doing breakfast recipes in the crockpot. It's been such a stop and go kind of thing that I've decided to give myself a break for awhile. Manicotti in the Crockpot? A TOTAL WINNER!

I LOVE, LOVE, LOVE manicotti. Seriously my favorite Italian dish. 

#1 brought it up the other day. Not sure what the context was now that I think back on it, but the wheels started turning...I wonder if I can find a recipe for the crockpot.

I had made manicotti once before. It was way, WAY back when the Warden and I were first married.

What a MESS! You had to cook the noodles and THEN fill them with the cheese mixture. No way! Uh uh! It was yummy, but probably not worth the work to get there.

With this recipe, you just get the pasta out of the package, pipe in the cheese (I used my Pampered Chef thingy--not sure what it's called, but here's a picture for you), throw it on top of a lovely bed of sauce in the bottom of the crockpot, top it with sauce, meat and cheese and throw another layer of filled pasta on top then topping THAT with more sauce, meat and cheese.

I cooked it on high for a bit more than two hours.

Oh MY! YUMMMMY! And a whole lot less work.

The BEST of the Crockpot Recipes So Far

Dinner tonight was honestly SO GOOD! Yesterday, when I told the kids we would be having fish tonight, I expected them to groan, but was so surprised to hear the opposite. Two kids were going to be gone for the night. They were seriously trying to talk me in to changing the order of the menu, and I considered it. But the kids who are here wouldn't hear of it. I'm guessing we'll have to make this one again.

Thought I'd take a minute and share our faves of what we've tried in our crockpot so far. Here they are in no particular order:


We've had some real losers too, so maybe that will be a future post. All in all, the kids don't love the recipes that have had eggs or hash browns in them. The consistency is just a bit grainy and not like what you love about either ingredient when they're cooked in a pan--firm and maybe even just a bit crispy.

I love that I've learned that pasta can be poured in uncooked for the last 15 minutes. That's so great! There have been too many times when I've made crockpot pasta dishes where they've asked that you pre-cook the pasta and pour it in. Ick! It ends up WAY overcooked.

Crockpot Menu - Week #6

This is going to be a much better week as far as breakfasts go. We're going to give them more of a shot this week. We have the outlet timer working just great, so I'm looking forward to waking up to some yummy smells (although, from what I understand, the hard boiled eggs smell nasty).

My kids have decided that breakfasts shouldn't be done in the crockpot. I'm going to give it one more fighting chance to see if these turn out. I've made my mistakes in the past and have learned from them (I hope), so we'll see how it goes. One thing's for sure, my crockpot cooks fast, so I'm taking about an hour off of each cook time. Also, the cheese will need to be added just a few minutes before serving; otherwise, it gets too crunchy. In my mind, cheese shouldn't be crunchy. Would you agree?

For the banana bread, again, I'm using my friend Caitlin's recipe but using the cooking directions from the linked recipe.

Crockpot Menu - Week #5

You may see a number of breakfasts repeat during this coming month's menus. I really slacked on the breakfast thing. I'd be all snuggled up in my bed and suddenly remember that I hadn't filled the crockpot and started it up. I also haven't figured out how to use the outlet timer yet. I tried it out and failed the other day, so I need to pore over the instructions (or maybe in my case it's "destructions) one more time to see what I was doing wrong.

Crockpot Chicken and Corn Chowder

I have decided that the best recipes are those without exact measurements. If you own the Madhouse cookbook, you will see that there are a few of my mom's recipes that just have ingredients listed. It's up to the creator to figure out how much of what to throw in. Those recipes--my mom's dip and her fried chicken, as two examples, were her claim to fame. They were delicious!

My friend, Angelina, has shared a couple recipes with me this month and given me permission to share them with you. She explained to me that this first one doesn't have measurements, so you KNOW it's going to be a winner. Thank you, Angelina! 

Here are the ingredients......

*Boneless Skinless Chicken Breasts
* Onions-chopped
* Evaported Milk (can use regular milk or some of both, although it is creamier with the evap. milk- if you use too much it is more of a soup than a chowder)
*Potatoes (peeled, chopped into bite size chunks)
* Corn (Kernel/Cream) by preference or what you have on hand
*Season to taste: Garlic Salt, Seasoning Salt, Pepper, Salt. Sometimes I add Basil and Oregano if I want a slightly different flavor

Top with:
* Grated Cheese
* Bacon (I cook ahead and break it up into a bag or small tupperware container)
