Cram One More Thing In

I thought I might add one other thing into this new writing tradition....dinner.

Tonight, we had teriyaki chicken:

1 C. water
1 C. sugar
1 C. soy sauce
some garlic
chicken pieces

Throw them in the crockpot on low for 6 hours or high for 3 hours and serve over rice.

Someday, I'm going to learn, but I'm fearing that it may be too late. I guess what I'm saying is that I might now be considered an "old dog." New tricks are just not my thing. I continually try to do "one more thing" throughout my day, and with this comes a chaos. I'm always in a rush. I think I'm finally deciding that that's just who I am. That's how I roll.

My brother was in town last week. As we talked, it became apparent that I may be sharing too much here, in his opinion. Well, he's going to love my first bad....Talk about TMI. I figure there might just be a mom or two out there who might just commiserate with me and my life. They might nod and smile along with what I write as they read. I hope this is the case, anyway.

We were raised in a very hush, hush household. There were too many taboo topics to number. Someday, maybe I'll make a little list for you.

So, consider yourself warned....TMI ahead.



Bads

  • Not on the floor?!
I went to a public place today--a museum, actually. I needed to speak with the curator and spent quite a bit of time talking to her. I had a little entourage of four with me. I had told the kids before we walked in that they were not to touch anything and this was an adult place, so in order to go in, they needed to act like little grown ups. They did a good job.

After a few minutes of me speaking to the curator, #7 came up to me and told me that she needed to go to the bathroom. Being relatively new to using public facilities, #7 does what each of my children did at this stage in life--ask to go to the bathroom anywhere and everywhere. I guess you could say she's becoming a connoisseur of public restrooms. She could probably tell you where the best place to go in the entire Beaverton area, if you know what I mean.

Anyway, this museum was no different. The little girls room was calling her.

I had the kids dressed in swimming suits as there is a park with a fountain close by. I thought that if they could do a good job on this errand, they could be rewarded with some fun time in the water.

The kids kept wanting to go into a back room. They knew they shouldn't, so they stood at the entrance and looked in. The restroom was in the back of this area, but clearly written on the door were the words "Not a public restroom."

#7 kept coming up and pleading with me. I finally said, "Well, then, we'll just get in the car and go home. Her response was immediately, "Oh, never mind. I don't need to go bathroom."

Within moments there was a new water feature in the museum. Ugh! EMBARRASSING!

I went and got some carpet cleaner and took it to the museum.

I went to pick #5 up at the church today from Cub Scout day camp. There was a blood drive going on. 

As I pulled into the parking lot and saw the signs, I remembered that I had missed the last one, so I thought it might be a good thing to do this time. I pondered my schedule for the rest of the afternoon and evening and found that the only time I had available was during that next hour. I could do this. I was sure I could.

I need to add that while I waited, my cell phone died. 

#5 got into the car and the plan was created. At this point, I had six children in my care--three ten-year-old boys and three younger children.

There is an elementary school across the street from the church. I decided that I'd take the kids to the playground and let them play. I would run across the street on foot and do my thing. They would then have the car at their disposal if they needed it. I left it unlocked but took the keys with me.

I borrowed every phone I could, knowing that the Warden would be heading home and would pass the school, to reach him to have him stop by the school and watch over the kids for a few minutes. I heard nothing from him.

Never have I wanted to bleed faster. I knew once I was hooked up, there would be no escape. The pressure was on. Thankfully, I got in there, got it done, and everything was fine, but my stress level was HUGE.

There's more to this story than I'm sharing, but that would make but another bad thing, and I've limited myself to two, so there. Let's just say that I was supposed to be home by 5pm in order for a mom to come pick up her boys, but I didn't get home until 5:13. I had missed her, and I was sure she had stressed about where I was and where her boys were.

When I finally spoke with her, she had been late, so she thought it was her fault because I had to have #5 to soccer practice by 5:30. Ah well. It all worked out, but it doesn't change that fact that maybe everything would have been solved if I hadn't decided to give blood.

I have been a mom to two for these past three days. #1 is obviously not around. #s 2 and 3 have been a EFY (an LDS youth conference kind of thing). #4 has been at scout camp (surviving, literally). #5 has been spending his days at Cub Scout day camp. That leaves #s 6 and 7 in my care. To be honest, it's been pretty sweet! It's been fun to focus on just the two of them. We went to the movies, just us three, yesterday and bought a big ol' $8 popcorn and had it refilled just before we went home. Sa-WEET!

Anyway, today ended that. I have the little girl I keep every Thursday and her older brother. It's been great because they play so well with #s 6 and 7.

We went from park to park to park today. Including the fountain and elementary school playground I mentioned above. All in all, I think we must have gone to five different parks today.

  • Spiritual highs.
I LOVE picking my kids up from EFY. I think I told you this a couple days ago. The first day was wonderful, Tuesday and Wednesdays were okay, but tonight was a total spiritual high. 

The kids dress up one day during EFY. The kids looked so sharp when they left this morning.

#2 went home with some friends to play games afterward, so it was just me and #3 for the ride home. She went through all of her notes and shared everything she'd learned and what it meant to her. I feel honored to be entrusted with such experiences and feelings.

I make a KILLER peanut butter chocolate milkshake. I made them for the third time this week tonight. I really have done well to cut back on my white sugar intake, but this one just can't be avoided...yet. I have cut out the white flour--the stomach pains just aren't worth it.



Tomorrow, #1 gets her travel plans. She'll depart from the MTC within the next two weeks and will be on her way to the very rainy Philippines. We'll read about all of this in her email on Saturday.

Also tomorrow, I'm off to Cub Scout day camp to hang out with my good buddy Tonya.

Once all of this week's activities are over, next week will be surprisingly mellow, but you know I probably won't allow it to be that way. It's the old dog in me.

Good-Bye, Nutella....Oh, How I'll Miss You

Went to see my dad today. While I was there, I asked him when his stomach problems started. I remember him having almost constant stomach pains when I was a teenager. He shared that he'd pretty much always had them. The interesting thing was that the only time he didn't was early in his marriage and then again when he served as a bishop.

The reason I asked him was because I, too, have been suffering from stomachaches. I noticed that I was going to bed with them and then waking up with them in the morning. I had had a bad stomach when I was a teenager, but haven't suffered from it again until just recently.

My dad told me that both of his parents had stomach issues as well. His brother died of stomach cancer a number of years ago, and my mom died of colon cancer. I guess I'd better interject that I know that cancer doesn't actually kill people, it's the periphery illnesses that accompany it. In my mom's case, it was pneumonia. In my uncle's case, I'm not sure, but he passed away on my birthday my second year in college. I remember hearing, though, that by the time they found his cancer, the tumor was sizable.

A couple months ago, I started to get these little promptings to change my diet. I wasn't sure how to go about it, but I knew I'd probably better do something. These promptings started in before my stomachaches started and before I recalled the history of gastrointestinal tract cancers in my family. That reminder only fueled the need to do this. It look me awhile to get my act together and figure out just what I was going to do.

For the past three weeks, I have changed my way of eating. I have eliminated white flours and gone to whole grains. I had a blood test run to see if I was gluten intolerant, and it came back negative, so I'm sticking with the whole grain thing. I have also taken sugar and white rice from my diet. I'm eating lots of fruits and veggies, but I'm also eating protein and dairy.

So, yes, there goes my Nutella. DARN!

Since I've been doing this, #1 has made cookie dough twice. Next to Nutella, cookie dough is my next big weakness. 

The first time she made it, I was able to walk by the bowl like it was no big thing. The second time, though, #3 was standing by the bowl giving some to the kids. She said, "Mom, you've been doing so well. Just have a little bit." So, I did. BAD MOVE! Within an hour, my stomach hurt so badly and continued on into the next day. It was so bad that the Warden called me from work midday just to check on the status of my stomach.

So, I guess I'm on the right track.

With the sugar thing, I have heard that sugar feeds things like bacteria. If sugar feed bacteria, what else does it feed? If I cut off the sugar from my diet, maybe I'll cut off the food supply for something bad inside me. Maybe that's not correct thinking, but that is my theory nonetheless.

#5 and I arrived at his soccer practice a half hour early last night, so we took the time to drive to the grocery store to get him a snack. He purchased a peach, and I bought a nectarine. We also shared a bag of pistachios. It was such an interesting experience. The aisles I would have normally been drawn to weren't even a temptation for me. My brain had accepted them as not even an option--forbidden territory. I didn't look at them as evil places, per se. It was just that they weren't worth my time. I wasn't interested.

So, from here on out, in my "What's for Dinner" section, look for cleaner eating ideas. I'm still working on having crock pot recipes for dinner, but I will also work on including breakfast, lunch, and snack ideas that fit with this healthier way of eating.

I'm hoping to have found the key to eliminating the problems it seems that generations of my family have suffered from.

I have to add that during this time, while I was figuring things out, I happened across this little fact. I'm thinking the whole red dye situation in our home has me wondering about how much extra crapola gets put in our daily diet. Well, I'm done with it. Just trying to do it in a prudent way.

Thoughts from Today - Three Days in a Row, People!

Look at me!...Three days in a row.

Proctored the A.P. European history test today. Four hours on my feet. I'm beat (and a poet). So dragging, so I'm off to bed.

#1 caught the Warden and me up in searching for a waterproof satchel for her. Up until now, we thought she could just wait until she got to the Philippines, so she could get one there, but it seems that she's feeling that she'll need one for the MTC. No luck yet, but we're still looking.

That's the only thing keeping me up at this point. Well...that, and my desire to be on a three-day blogging streak.

Finished Ether this morning. That means I should be done with the Book of Mormon within the next couple days. Moroni goes by so fast.

So, so sad to watch a civilization die. Clearly revenge is not a good motive. We often hear "revenge is sweet." This is such a farce! It's a HUGE lie! Doesn't anyone really believe in Romans 12:19? Is it because we don't trust? Well, I think I've decided that I'm going to trust that. Holding grudges does nothing but hurt the individual who holds it. Here we are back to drinking poison and hoping another person will die. Grudges only hurt the holder of them. Forgiveness, on the other hand, is freeing.

As I read I got to thinking about the Castro brothers. Just watched an interview about them yesterday. It's left some pretty strong impressions. That was an AWFUL situation, no question. It sickens me, but reading Ether has brought some even stronger impressions.

I also think it must have been a HUGE tender mercy for Moroni to have abridged that record and particularly that portion of the record as he watched his own people die out. BRUTAL! I feel for Moroni, but surely, seeing things through Ether's eyes and knowing that he isn't the only record keeper to have watched to the very end must have made him feel not so alone. Would that have held some amount of comfort for him? I like to think so.

It was a good day today. A busy, crazy day, but a good day, nonetheless. Tomorrow will be a day at home to get laundry done and get the menu set for next week and the grocery list ready. I've had a few friends tell me that they like the menus, so I'm going to attempt to get things up and running in that way. The Disneyland trip kind of threw me off. I'm trying to get a year's worth of crockpot dinners set up. I'm about halfway there. I'll post next week once I get that done.

Oh yah, #1 and I spent some time at the Family History Center today too. We found some pretty cool things about the Warden's third great grandfather--Lot Smith.

Yup. It was a good day.

I've taken a bit of a vacation on the crockpot menus. Time to get back into the swing of things. I've been using my crockpot nightly, but I just haven't had a formal menu made up. Here's one for this week. I've temporarily retired from doing breakfast recipes in the crockpot. It's been such a stop and go kind of thing that I've decided to give myself a break for awhile. Manicotti in the Crockpot? A TOTAL WINNER!

I LOVE, LOVE, LOVE manicotti. Seriously my favorite Italian dish. 

#1 brought it up the other day. Not sure what the context was now that I think back on it, but the wheels started turning...I wonder if I can find a recipe for the crockpot.

I had made manicotti once before. It was way, WAY back when the Warden and I were first married.

What a MESS! You had to cook the noodles and THEN fill them with the cheese mixture. No way! Uh uh! It was yummy, but probably not worth the work to get there.

With this recipe, you just get the pasta out of the package, pipe in the cheese (I used my Pampered Chef thingy--not sure what it's called, but here's a picture for you), throw it on top of a lovely bed of sauce in the bottom of the crockpot, top it with sauce, meat and cheese and throw another layer of filled pasta on top then topping THAT with more sauce, meat and cheese.

I cooked it on high for a bit more than two hours.

Oh MY! YUMMMMY! And a whole lot less work.

The BEST of the Crockpot Recipes So Far

Dinner tonight was honestly SO GOOD! Yesterday, when I told the kids we would be having fish tonight, I expected them to groan, but was so surprised to hear the opposite. Two kids were going to be gone for the night. They were seriously trying to talk me in to changing the order of the menu, and I considered it. But the kids who are here wouldn't hear of it. I'm guessing we'll have to make this one again.

Thought I'd take a minute and share our faves of what we've tried in our crockpot so far. Here they are in no particular order:


We've had some real losers too, so maybe that will be a future post. All in all, the kids don't love the recipes that have had eggs or hash browns in them. The consistency is just a bit grainy and not like what you love about either ingredient when they're cooked in a pan--firm and maybe even just a bit crispy.

I love that I've learned that pasta can be poured in uncooked for the last 15 minutes. That's so great! There have been too many times when I've made crockpot pasta dishes where they've asked that you pre-cook the pasta and pour it in. Ick! It ends up WAY overcooked.

Crockpot Menu - Week #6

This is going to be a much better week as far as breakfasts go. We're going to give them more of a shot this week. We have the outlet timer working just great, so I'm looking forward to waking up to some yummy smells (although, from what I understand, the hard boiled eggs smell nasty).

My kids have decided that breakfasts shouldn't be done in the crockpot. I'm going to give it one more fighting chance to see if these turn out. I've made my mistakes in the past and have learned from them (I hope), so we'll see how it goes. One thing's for sure, my crockpot cooks fast, so I'm taking about an hour off of each cook time. Also, the cheese will need to be added just a few minutes before serving; otherwise, it gets too crunchy. In my mind, cheese shouldn't be crunchy. Would you agree?

For the banana bread, again, I'm using my friend Caitlin's recipe but using the cooking directions from the linked recipe.

Crockpot Menu - Week #5

You may see a number of breakfasts repeat during this coming month's menus. I really slacked on the breakfast thing. I'd be all snuggled up in my bed and suddenly remember that I hadn't filled the crockpot and started it up. I also haven't figured out how to use the outlet timer yet. I tried it out and failed the other day, so I need to pore over the instructions (or maybe in my case it's "destructions) one more time to see what I was doing wrong.

Crockpot Chicken and Corn Chowder

I have decided that the best recipes are those without exact measurements. If you own the Madhouse cookbook, you will see that there are a few of my mom's recipes that just have ingredients listed. It's up to the creator to figure out how much of what to throw in. Those recipes--my mom's dip and her fried chicken, as two examples, were her claim to fame. They were delicious!

My friend, Angelina, has shared a couple recipes with me this month and given me permission to share them with you. She explained to me that this first one doesn't have measurements, so you KNOW it's going to be a winner. Thank you, Angelina! 

Here are the ingredients......

*Boneless Skinless Chicken Breasts
* Onions-chopped
* Evaported Milk (can use regular milk or some of both, although it is creamier with the evap. milk- if you use too much it is more of a soup than a chowder)
*Potatoes (peeled, chopped into bite size chunks)
* Corn (Kernel/Cream) by preference or what you have on hand
*Season to taste: Garlic Salt, Seasoning Salt, Pepper, Salt. Sometimes I add Basil and Oregano if I want a slightly different flavor

Top with:
* Grated Cheese
* Bacon (I cook ahead and break it up into a bag or small tupperware container)
