| D: Burritos/wraps Salsa Chicken Lettuce Wraps Throw a bunch of boneless, skinless chicken into a crockpot with a jar of salsa. Cook it on low all day or until you can shred it. Cook up a bunch of brown rice. We served the shredded chicken, rice, shredded cheese and a small dab of sour cream on a large lettuce leaf and wrapped it up like a burrito. It was DELICIOUS! You can do the same thing with a whole wheat tortilla and use the lettuce inside the wrap. Have lots of napkins on hand, or be a better wrapper than I am. |
