What's for Dinner: Cleaner Eating

We're on week #24 this year. Here is this week's menu:

Sunday
B: Dave's Killer Bread toast w/butter

B: Greek yogurt w/honey (we prefer Zoi brand)

L: whole wheat pita filled w/tuna salad
S: peanut butter fruit dip
D: Salsa chicken lettuce wraps (see recipe below)
Tuesday
B: Cottage cheese
S: Hummus w/veggies
L: whole wheat bagel w/cream cheese
S: deviled eggs
D: build it yourself vegetable soup
Wednesday
B: Egg and toast
S: whole wheat banana bread
L: dipping stuff
S: cheese chunks
D: taco salad
Thursday
B: Granola w/Greek yogurt and a touch of honey
S: Cheese sticks and nuts
L: Salad
S: raisins
D: Southwestern two bean chicken
Friday

S: chips and salsa

Salsa Chicken Lettuce Wraps
Throw a bunch of boneless, skinless chicken into a crockpot with a jar of salsa. Cook it on low all day or until you can shred it. Cook up a bunch of brown rice.

We served the shredded chicken, rice, shredded cheese and a small dab of sour cream on a large lettuce leaf and wrapped it up like a burrito. It was DELICIOUS!

You can do the same thing with a whole wheat tortilla and use the lettuce inside the wrap.

Have lots of napkins on hand, or be a better wrapper than I am.
